Homemade Granola

Ingredients
  

  • 400 g Rolled oats
  • 60 g Pumpkin seeds
  • 60 g Sunflower seeds
  • 80 g Nuts, roughly chopped
  • 50 g Blanched almonds, chopped
  • 50 ml Maple syrup
  • 2 tbsp Golden syrup
  • 2 tbsp Oil or melted butter
  • 1 tsp Cinnamon
  • Pinch Salt
  • 20-50 g Dried fruit Optional (afterwards)
  • 30-40 g Cacao nibs Optional (afterwards)

Equipment

  • 1 Large mixing bowl
  • 1 Wooden spoon
  • 1-2 Baking Trays

Method
 

  1. Heat the oven to 160°C fan / 180°C conventional.
  2. Mix the oats, pumpkin seeds, sunflower seeds, nuts, almonds, cinnamon and salt.
  3. Add the maple syrup, golden syrup and oil/melted butter and mix really well so everything is coated.
  4. Spread evenly over a large baking tray.
  5. Bake for 25–30 minutes.
  6. For a looser granola, stir halfway through. For bigger crunchy clusters, press the mixture down and don't stir it during baking.
  7. Leave it to cool completely on the tray. This is important because it crisps as it cools.
  8. Once completely cold, mix through the dried fruit and cacao nibs.
  9. Store in an airtight container.
